Scalloped Tomatoes
Ingredients
- 4 or more firm ripe tomatoes
- 1/2 to 1 cup fine bread crumbs
- Salt and pepper to taste
- 1 Tbsp. sugar
- 1 tsp. juice from an onion
Slice tomatoes to 1/4 inch thick. Layer in a buttered casserole dish with salt, pepper, sugar and
onion juice. Top with a layer of bread crumbs and dot with butter. Bake in a warm oven (300 - 325 degrees)
until tomatoes are tender and crumbs are nicely browned.

Coffee Cake
Ingredients
- 1 cup butter (butter is best)
- 1 cup sugar
- 1 cup syrup
- 4 eggs
- 1 cup cold brewed coffee
- 4 cups flour
- 1 teaspoon soda
- 1 1/2 teaspoons cloves
- 1 teaspoon cinnamon
Cream butter and sugar well. Add syrup and mix. Add eggs one at a time and beat well. Mix flour, soda
cloves and cinnamon together. Add to butter mixture alternately with coffee.
Bake in large pan or two in moderate (350 - 375 degree) oven

Corn Bread
Ingredients
- 1 cup cornmeal
- 1 cup household flour
- 4 teaspoons baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1 tablespoon butter
Sift flour and baking powder together. Mix all dry ingredients in a bowl. Beat egg until very light. Add egg
and milk to dry ingredients and lastly, the butter that has been melted in the baking pan. Bake for 20 - 30
minutes in a moderate (350 - 375 degree) oven

Molasses Candy
Ingredients
1 cup molasses
- 2 cups sugar
- 1 teaspoon vinegar
- a little butter and vanilla
Mix. Boil for 10 minutes. Pour onto a cookie sheet. Cool and pull the candy into "ropes", cut (with
scissors) and store.
Dandelion Cordial
Ingredients
- 2 quarts of dandelion blossoms
- 4 quarts of boiling water
- 3 pounds of sugar
- 2 oranges
- 1 lemon
Pour boiling water over dandelion blossoms and let stand overnight. Strain.
Disolve sugar in boiling water (at least 1 quart - the less water used to disolve the
sugar, the sweeter the cordial). Thinly slice oranges and lemon. Add sugar water
oranges and lemon to strained dandelion liquid. Let stand for three days. Strain
again before serving.
NOTE: Dandelion flowers that have been sprayed with any kind of herbicide or
insecticide should not be used. The wilder the better.
Wild Greens Salad
Pick dandelion plants before flowers come on. Harvest leaves and white stalk above the root.
Wash thoroughly.
Dressing
Equal portions of ham or bacon fat and vinegar. Season with salt and pepper. Heat
and pour over greens about three minutes before serving.
